The Day I Menu Planned

Back in my festive days, sometimes I would go days without eating. And Ella if you’re reading this, I’m just kidding sweetie, don’t be ridiculous.

Turns out the great majority of reality enhancers I enjoyed were appetite suppressors, so feasting on any food was repulsive. Unless of course, chuppa chups and lifesaver icy poles constituted food, in which case I was quite diligent with eating three responsible meals a day, actually.

It was as if food was irrelevant — that the unity and love I felt and the escape I longed for overruled any base needs I had, like nutrition, or sleep. There were more important things to do, you see. There were universal secrets to uncover. There were strangers to hug. There was freedom to grab.

Except that there wasn’t really, because there was nothing real to it at all.

I say all this because it’s quite ironic, actually.

You see, I’m sitting here in my sweet old house. I have one child asleep and another one growing inside me. There is soft, soothing music playing and if I look up, I see a wall of pictures documenting the events of my life after I decided to wake up and face what I was running from. There is a picture of a tree, stenciled on hand-made paper which I carted around with me when I traveled through Asia. There is a photo of Joel and I holding onto each other, him whispering something into me ear, me laughing. There is a picture of my swollen belly, just weeks before I gave birth to Ella. There are her footprints mounted on card and placed in a frame. And  — my favourite — there is a photo of her and Joel asleep together, foreheads touching, when she was just a few months old. I am sitting on our new couch; one of those fancy, grown-up kinds. One that costs in the thousands. There are flowers and pretty tablecloths and bright colourful rugs everywhere I look. And you know what? There is food in our fridge. Stacks of it. And it’s the fancy kind – the organic, free-range, everything-free kind I have to avert my eyes from when I pay so I don’t have a small-scale heart attack. And this food? I COOK with it. I make MEALS for my FAMILY and I eat it every day, three times a day. I NEVER DON’T EAT.

And because this astonishing fact makes me feel grown up and motherly and rather proud of myself, I’d like to tell you all something else. This week, I menu planned. I PLANNED A MENU FOR MY FAMILY.

I know. It’s all just so ridiculous.

Friends — I present you with our week in meals. The quick and very easy kind because let’s not get ahead of ourselves, but healthy food nonetheless. Feel free to pocket the recipes in your go-to repertoire if you want to feel all motherly and wholesome, too. Here’s to people who cook stuff! *clink*

San Choy Bau


Just fry up some onion, add chicken mince (you could use pork mince if you’d prefer) and brown it off. Add veggies chopped up really finely (mushrooms, carrot, capsicum, corn, etc) and a fair amount of honey soy sauce. Cook on high for another 5-10 minutes until all meat is cooked and veggies soften a bit. Rip off some lettuce leaves and dinner is ready!


Cheesy Quinoa Bites


Just mix 1 1/2 cups of cooked quinoa with 1/2 cup of cooked corn, a grated carrot, 3/4 cup grated cheddar cheese, 2 eggs and a bit of flour. Roll into bite-sized patties, put on greased tray and bake in the oven at 200 C for 30-40 minutes or until golden. Ella loved these and ate them on their own, but you could dip them in any sauce you’d like, or eat them with a salad or in a wrap for the big people wanting dinner or lunch.

Pumpkin Soup

Nothing special here. Chopped up pumpkin and potato covered with chicken stock and a bit of salt and pepper and simmered on stove until veggies are soft. Whizzed by one of those hand-held whizzer blender things, and a bit of natural yoghurt mixed in at the end. I love soups because you can freeze them and eat them later.

Summer BBQ


Sooooo easy. I just throw together a salad made out of roast veggies and mix it with baby spinach, then drizzle with olive oil and a squeeze of lemon. Cook up some steak or whatever meat you like and it’s done!

Salmon & Veggie Cakes


This is a get-rid-of-whatever-veggies-are-in-the-fridge recipe. I fried up some onion and finely chopped kale. Then, I added it to a mix of 1 1/2 cups of mashed (cooked) pumpkin and potato, 1 tin of pink salmon (use freshly cooked salmon if you’d prefer), a handful of chopped macadamias, 1 egg and a bit of flour. Joel is paleo so I use coconut flour, but normal plain flour is fine. Shape into patties, put on a greased tray and cook in a 180 C oven for 40 minutes or until golden. You can really use any veggies for this recipe though. Eat with a salad, or in a burger, on on their own is just as good. Ella ate three for lunch today.


So there you have it. Living, breathing proof that miracles can happen.
